I love the gourmet southwestern cuisine pioneered by such artists as Mark Miller, Stephan Pyles, and Bobby Flay. One of the reasons I love this food is because of its emphasis on the use of fresh chiles. I'm a chilehead. Also, I have long been a fan of cajun cuisine, a cousin to the great food of the southwest.
